Banana pecan muffins with Speculoos spread
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/2 cup pure maple syrup
- 1/4 cup speculoos or biscoff spread microwave for about 10 seconds to liquify
- 1 cup mashed banana
- 2 cups white spelt flour
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 1/2 cup chopped pecans
Preheat the oven to 375 and line a tin for 12 muffins.
Mix the vegetable oil, milk, maple syrup, speculoos and mashed bananas together, and fold in the dry ingredients. Stir in the chopped pecans and bake for about 25-30 minutes, or until muffins are golden brown.
Cool on a rack.
