Coconut macaroons with orange zest

  • 1 stick unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1/8 teaspoon salt
  • 2 teaspoons orange zest
  • 3 large eggs
  • 4 cups sweetened shredded coconut
  • 2 cups unsweetened shredded or flaked coconut
  • 6 ounces bittersweet chocolate, melted


  1. Preheat oven to 325 F and line 3 cookie sheets with parchment paper.
  2. In a large bowl, beat the sugar, salt, and butter together with a large whisk. Add the orange zest.
  3. Incorporate the eggs, one at a time until well blended.
  4. Add the 6 cups of coconut and mix well.
  5. Using a small ice cream scoop, shape macaroons and place on the prepared cookie sheet, about 1 1/2 inches apart.
  6. Bake for 25-30 minutes, or until the tops are browned. Allow to cool on the baking sheets.
  7. Once cooled, melt the chocolate in a microwave safe container.
  8. Drizzle on the macaroons using a fork.
