Coconut macaroons with orange zest
Ingredients
- 1 stick unsalted butter, at room temperature
- 3/4 cup sugar
- 1/8 teaspoon salt
- 2 teaspoons orange zest
- 3 large eggs
- 4 cups sweetened shredded coconut
- 2 cups unsweetened shredded or flaked coconut
- 6 ounces bittersweet chocolate, melted
Instructions

Preheat oven to 325 F and line 3 cookie sheets with parchment paper.

In a large bowl, beat the sugar, salt, and butter together with a large whisk. Add the orange zest.

Incorporate the eggs, one at a time until well blended.

Add the 6 cups of coconut and mix well.

Using a small ice cream scoop, shape macaroons and place on the prepared cookie sheet, about 1 1/2 inches apart.

Bake for 25-30 minutes, or until the tops are browned. Allow to cool on the baking sheets.

Once cooled, melt the chocolate in a microwave safe container.

Drizzle on the macaroons using a fork.
