Milk chocolate clusters

Author: loosely adapted from Foodandwine.com

You can make substitutions as long as the ratio of dry ingredients and chocolate is kept the same. Do not worry if the mixture appears loose. Once the chocolate sets, the clusters will hold together perfectly.

Ingredients

  • 2 1/2 cups Corn Flakes cereal
  • 1/2 cup golden raisins
  • 1/4 cup unsalted pistachios, chopped (optional)
  • 1/2 cup unsalted hazelnuts, toasted and chopped
  • 1/4 teaspoon fine sea salt
  • 2 oz white chocolate, roughly chopped
  • 11 oz milk chocolate, roughly chopped

Instructions

  1. Prepare a cookie sheet covered in parchment.
  2. In a large bowl, combine the Corn Flakes with the pistachios, hazelnuts, raisins and salt.
  3. Melt the chocolates in a microwave safe bowl stirring every 30 seconds to avoid burning the chocolate. Stir the chocolate until smooth and add to the Corn Flake mixture. Combine till the cereal is properly coated.
  4. Using an ice cream scoop, place rounds of the mixture onto the cookie sheet, using a spoon to keep cereal together. Allow at least one hour till the chocolate sets.
  5. Do not worry if the mixture appears loose. Once the chocolate sets, they will hold together perfectly.
