These soft peanut butter cookies are perfectly tender, and just like the ones from the bakery if not better. Just a few ingredients and very easy to put together. A 5 star recipe for sure!

Soft peanut butter cookies

  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt


  1. Preheat the oven to 350 F. Line 2 cookie sheets with parchment paper.

  2. In a stand mixer with the paddle attachment, mix the peanut butter, butter, sugar and brown sugar until smooth.

  3. Add the egg and vanilla extract and continue to mix until well combined.
  4. In a separate small bowl, whisk together the flour, baking powder and salt.

  5. Add the flour mixture to the butter and sugar mixture in three parts until well  combined.

  6. Use an ice cream scoop the dough into 1 inch balls, and place on the prepared cookie sheets.

  7. Flatten each ball down using the bottom of a glass or mug, and use a fork to create a criss-cross pattern. These cookies will not flatten during baking, so make sure they are nicely shaped before baking.

  8. Bake for 8-9 minutes.

  9. Let cool on the baking sheet for a few minutes and then transfer to a wire rack. These keep well for a couple of days in an airtight container.
