This granita is a perfect way to use up leftover pineapple. It has 3 ingredients, and loads of flavor. You don’t need an ice cream maker, just a sweet, ripe pineapple and some time in the freezer. This version is kid-friendly but this recipe would be fantastic as a cocktail with a splash of vodka, a refreshing summer drink.

Pineapple Granita
Serves 6-8
Ingredients
- One ripe pineapple. cut into pieces about 4 cups
- 1/4 cup sugar
- 2 tablespoons lime juice
Instructions

Puree the pineapple, sugar and lime juice in a food processor until smooth.

Pour into a shallow baking dish and place in the freezer until frozen, about 3 hours.

When you are ready to serve the granita, remove from the freezer and cut into chunks using a fork.

Place the pineapple chunks into a food processor and blend for about a minute until the granita is light and there are no more chunks.

Garnish with mint leaves or raspberries and serve immediately.
