This spinach and feta flatbread recipe is inspired by a dish from Byblos restaurant in South Miami Beach, where the specialty is Turkish and Syrian cuisine. It was so delicious that we just had to make our own version. Here, we use Ricardo’s easy pizza dough recipe as a base. Serve with a Fattoush salad and herbed yoghurt for a perfectly Mediterranean meal!
Spinach and Feta Flatbread
- 1 Pizza dough recipe (See link above)
- 3 tbsp unsalted butter
- 2 garlic cloves, minced
- 250 g frozen spinach, thawed
- 1 cup ricotta cheese
- Fine sea salt and cracked black pepper
- 1 tsp olive oil
- 3/4 cup feta cheese, crumbled
- 1/4 cup finely grated parmesan cheese
- 1 tbsp lemon zest
Prepare pizza dough as per instructions.
Preheat oven to 400F. Line 2 baking sheets with parchment paper.
Squeeze all excess liquid from the thawed spinach until almost dry.
In a frying pan, melt the butter and sauté the minced garlic and spinach for 1-2 minutes. Transfer to a large bowl and cool for 10 minutes.
Add the ricotta, salt, and pepper to the bowl, and mix to combine.
Divide pizza dough into 4. Roll each section out into an oval shape.
Spoon filling onto centre of each oval, fold in sides and twist ends (don’t totally enclose the filling – the shape should look sort of like boats).Sprinkle the filling with feta.
Place onto prepared trays, allowing room for spreading. Brush or spray lightly with olive oil.
Bake for 15-20 minutes or until crisp and golden.
Before serving, sprinkle with some parmesan and lemon zest. Serve with lemon wedges.
