Turmeric deviled eggs

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 tablespoon minced fresh parsley, plus more for garnish
  • 1-2 tablespoons lemon juice (juice of 1/2 lemon)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon Piment d'espelette or smoked paprika
  • pinch of cayenne pepper

Instructions

  1. Slice each egg lengthwise, and gently transfer the yolks to a bowl.

  2. Mash yolks with a fork. Add remaining ingredients and mix until well incorporated.

  3. Garnish with parsley.
