Turmeric deviled eggs
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 tablespoon minced fresh parsley, plus more for garnish
- 1-2 tablespoons lemon juice (juice of 1/2 lemon)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon turmeric
- 1/2 teaspoon Piment d'espelette or smoked paprika
- pinch of cayenne pepper
Slice each egg lengthwise, and gently transfer the yolks to a bowl.
Mash yolks with a fork. Add remaining ingredients and mix until well incorporated.
Garnish with parsley.
